'Sage Eatery' Delights the Senses in Pagosa Springs.


My wife's parents were born and raised in Pagosa Springs, Colorado so we spend some time here every now and then...and nestled in the heart of Pagosa Springs, Colorado, Sage is a culinary gem that has captivated the taste buds and hearts of locals and tourists alike. I recently had the pleasure of dining at this exquisite restaurant, and it was an unforgettable experience that left me craving for more.


Sage offers a warm and inviting ambiance that perfectly complements the natural beauty of Pagosa Springs. With its rustic yet elegant décor, dimmed lighting, and a cozy fireplace, the restaurant exudes an intimate and comfortable atmosphere. Whether you're celebrating a special occasion or simply enjoying a night out, Sage sets the stage for a memorable dining experience. From the moment I stepped through the door, I was greeted with a genuine and friendly welcome. The staff at Sage are not only professional but also incredibly attentive. They go above and beyond to ensure that every guest's needs are met, offering expert recommendations and answering any questions about the menu. The level of service truly enhances the overall dining experience. We brought two of our friends with us and sat outside at the picnic tables. They have a great awning that keeps the sun off you. We're from Texas so can handle the Colorado heat quite well. Loved that they have a big dog bowl outside for water. One of our friends ordered a Patty Melt and the other ordered a burger. According to their reactions, both sandwiches were outstanding.

The heart and soul of Sage lies in its cuisine, and it certainly does not disappoint. The menu is a fusion of contemporary American cuisine with a focus on locally sourced, seasonal ingredients. Each dish is a work of art, thoughtfully prepared and beautifully presented.


During a second visit in one month, I started my meal with the Roasted Beet Salad, which was a delightful explosion of flavors and textures. The freshness of the beets combined with the creaminess of the goat cheese and the crunch of candied pecans made for a perfect appetizer. For my entrée, I opted for the Pan-Seared Colorado Trout, a dish that showcases the restaurant's commitment to sourcing local ingredients. The fish was cooked to perfection, and the accompanying herb risotto was a heavenly pairing. The menu also offers a variety of options for different dietary preferences, ensuring that everyone can find something to suit their tastes.


During a third (yes, third) visit, we brought our family. Let me assure you, Sage Eatery doesn't skimp on size here...wow, portion sizes are big. The four of us could have shared burgers but they were so good that we stuffed ourselves and rolled out the door.
