Salida, a charming town nestled in the heart of Colorado's Rocky Mountains, is a haven for outdoor enthusiasts and nature lovers. And the best spot for lunch in this community is Mojo's Eatery. This cute little joint in Salida, CO even offers electric car plug-ins for electrically minded folks. Even seating is 'small bar style' with a couple tables inside and outside for your preferences.
Mojo's a small place, family owned, with good, honest food. The guy who cooks is a professional chef, (went to school for it). Usually I'm a beef and potatoes kind a guy, but, I enjoyed eating there. Food was good! So much so that for the entire four days we were there, (my wife and I), three days of it we ate at "Mojo's". Would've been all four days but they close on Sunday and Monday.
I'll be honest with you - I hope they find a place bigger than the place they have now. Their customer base is really growing since they opened and they need a bigger spot. They would be twice as successful. They've done a really good job of using the space that they have and I noticed a lot of carry out orders leaving through the door. Apparently the locals know this too. The manager spoke to me during my second visit and told me that they continually hear - "You need a bigger store" and/or "You need a second location to handle the demand." When you hear that from your own dedicated customers, that's a great thing.
Now, believe it or not, what impressed me the most was (1) their pancakes, their sausage patties and their portion size. Although their fried pork belly and rice was a great option as well, I was amazed at the size and flavor of their amazing pancakes as well as the delicious homemade sausage patties that are offered with your morning meals. Phenomenal stuff, folks. So far, every meal I have ever eating from Mojo's offered impressive portions, (so much so that at times I couldn't finish all of it), and I could tell that the chef is passionate about his work. I heard one customer say - "If you like to eat and you enjoy doing so around friendly people, in a quiet, quaint little place, this place is worth the trip.
Mojo's Eatery is owned and operated by an actual chef and the kitchen puts out some amazing food. Since working in Salida, I've had most of the menu, but some of my absolute favorites are their "Destroyer burrito" and "breakfast fried rice with pork belly." Take my advice and order it. Definitely make it a point to eat here if you're ever in Salida. You won't regret it.
