The Fort: Morrison, CO - Exquisite Dining for a wonderful dinner

If you aren't familiar with the area of Morrison, Colorado, it's a home rule municipality in Jefferson County, Colorado, United States. Located on the southwestern ridge of Denver itself, it's well-known for some of its popular attractions, which include: Red Rocks Park and Amphitheatre, Dinosaur Ridge and Mount Falcon Castle Trail. And near the center of Morrison itself, you'll find 'The Fort.'


The Fort is located near the junction of US Highway-285 and Interstate 8 and easily spotted from the road...and the large sign that grasps your attention from the road is more than a handy indicator that you've arrived. Parking is ample and...as they say...'the early bird gets the best space.'

Some basic information on the restaurant itself: This establishment is located inside of an old historic fort, located off of the beaten path; about 35 minutes outside of downtown Denver. Not only do they provide a decent-sized, private parking lot but also a lovely courtyard that makes a brag-able selfie very possible. Walking through the restaurant, you'll notice a huge dining area and indoor patio seating as well as a full service bar.


This is an award-winning and nationally acclaimed "truly Colorado" restaurant that specializes in regional game, such as bison, elk and quail, as well as seasonal fish and hearty vegetarian fare influenced by American Indian and Mountain Man cuisine. Simply put, this place is one-of-a-kind...and the city of Morrison knows it. Everywhere you go, this spot is recommended by the locals.

What most folks aren't aware of, this restaurant was established in 1963 and built as an adobe replica of a Colorado fur trade Fort, known as Bent's Fort, was originally to be our family home. To pay for the construction of the entire premises, they turned it into a restaurant serving foods of 19th century Colorado. Researching the diaries of the pioneers and Indian tribes, they developed their menu based upon this research. The owner's father (named Sam Arnold) became known as an internationally known food historian, who knew James Beard and even cooked with Julia Child. The Fort served the first Mondavi wines in 1965, and knew Robert Mondavi. President Clinton hosted the Summit of Eight official dinner at The Fort in 1997. Many celebrities, and families enjoy the Fort for weddings, birthdays, anniversaries, and a romantic evening out of the city. Now that is quite a history.

The moment we walked in the front door, the hostess was friendly and we had a fantastic waiter. The hostess herself was so kind and gracious and the waiter answered all of our questions with a smile. Wonderful dispositions. I really liked that he helped us decide (the menu is pretty large) and we were both truly satisfied with our choices.


We started with something easy - half-size chips and guacamole appetizer...and it was the perfect amount to start the experience. Then, we ordered the herb butter buffalo filet mignon, and I really mean this - it was the best steak both of us have ever had. I'm serious. It cut like butter and we could not believe how succulent they were. We were amazed. For dessert we ordered the chocolate mud pie, per the waiter's recommendation, and it was worth every bite. We left feeling like we could walk on clouds. And we looked at each other and said - "We'll be back soon."


During our second visit, above 6 months later, we went with friends for Denver Restaurant Week and had a wonderful time. My significant other and I had the "Blue Plate" - buffalo and quail, salad and apple cobbler for dessert. It was all very well prepared and well presented. We ordered two bottles of wine and chatted the night away while nibbling on share desserts. Throughout the entire experience, the staff was very professional, helpful and friendly.


Keep in mind that The Fort is on the 'higher price range' so budget accordingly. When there's a time you have the need for a remarkable celebration, this will be an absolute treat for everyone who attends.

Since our first visit (above), we're visited this spot three times in two years. That's how wonderful it is - top notch.


A few quick notes: reservations are required because they are often at full capacity.


One recommendation for the appetizer: "Prairie Butter": bison bone marrow, served in femur bones with crostini. Outstanding.


One recommendation for the entrée: The Lobster and Steak entrée, expensive, but worth every penny.


Two recommendations for the dessert: The Chocolate Chili Bourbon Cake with chocolate & cake layers drizzled with bourbon sauce and caramel; rich, dark chocolate and New Mexican red chile cake and the taste of the bourbon was amazing!! The second recommendation is their Negrita, which is their signature dessert. Either way - an incredibly great way to finish an incredible experience.

Outstanding, all the way around. Pay them a visit. You won't be disappointed.
